Corned Beef & Cabbage, anyone?

I got all into St Patrick's Day this year. I'm back in Boston after living elsewhere for the better part of 20 years, and I just got swept up in the excitement!

Friday night I made Corned Beef & Cabbage from a recipe I found in the paper. Two adults and two children ate their weight in it that night, but there was a little left over:

Did I say a little? I meant a lot - there's more...

It's hard to tell how big those containers are, but that green container alone holds 12 cups. There's enough food there for a week!

How did you celebrate St Patty's day, and do you know if Corned beef & cabbage can be frozen???

Cheers,
Lara

Sounds fab--I'm thinking I wouldn't freeze it though--How about corned beef sandwiches as leftovers :)

Just stumbled upon this site researching the idea of "Can Women and Men be Friends" for a podcast we're (TheDivaCast)recording tomorrow. So thrilled to also see this yummy recipe. My hubby's been in Africa on a mission trip and is returning today--he missed St. Patty's Day, so I HAVE to make him a corned beef & cabbage boiled dinner--This sounds scrumptious. What a great blog--One stop "shopping"

Thanks!
